Lately, the sushi scene has veered toward super-exclusive omakase spots, and while those are great, too, we appreciate the unique vibe that chef Shuji Hiyakawa has cultivated at his Upper Eastside restaurant. Hiyakawa’s focus is, above anything else, on the quality of the food, and Wabi Sabi’s speciality is chirashizushi: a thoughtfully arranged bowl filled with all of the fresh seafood, vegetables and rice typical of a sushi roll. It’s a fun new twist on the Japanese dining that already makes our taste buds sing.
