Norman Van Aken
James Beard Award-winning chef Norman Van Aken is best known for introducing “fusion” into the lexicon of modern cookery, and is considered to be the founding father of New World Cuisine. At Time Out Market Miami—his first foray into a food and cultural market—he presents a menu that delivers the remarkable taste of South Florida and the Keys.
The only Floridian inducted into the James Beard Foundation’s prestigious list of “Who’s Who of Food & Beverage in America,” Van Aken has penned more than five cookbooks, the latest of which, Norman Van Aken’s Florida Kitchen, was awarded the Florida Book Awards’ Gold Medal for Cooking. He launched his fine-dining restaurant, Norman’s, at the Ritz-Carlton in Orlando in 2003, and it quickly became a dining institution among the city’s business-casual set. In 2006, he was dubbed one of the “Founders of New American Cuisine,” alongside Alice Waters, Paul Prudhomme and Mark Miller, at Spain’s International Gastronomy Summit.
At Time Out Market Miami, Van Aken puts his New World cuisine front and center. The menu synthesizes his decades of experience, proven innovation and passion for fresh, local ingredients.
